The general wisdom seems to be to switch to local time as soon as you arrive. Also, it's supposed to take a day for every hour of time difference for bubs to adjust completely.

This seemed to be true for me. At least my 7 month old basically was a complete nightmare during a 2 week trip to the West Coast. It was impossible, partly because she'd fall asleep as soon as she got in the car, and we had to drive everywhere. Then, her naps were all screwed up. However, a younger baby may be easier.
