Stored Breastmilk over 1 month old

Hi,
Thanks for the reply about milk supply last time. I have another question.
I read about in the forum how bm changes in its makeup over time to suit the baby's different growth needs. So, is it OK to give stored bm over a month old to my baby everyday, what i mean is will the nutrients be good enough or fat enough for my baby to consume now. Since i started storing bm 1 month before i went back to work and now i am pumping everyday as well, i have a good supply in the freezer.
Also i find the thawed milk has some tiny white things floating everywhere, is it normal? It also taste different than fresh bm, i personally like fresh much better. Will my baby also develop preference?
