DH working part time outside
I just found out that DH works part time on Sundays. We were having a conversation and she told me she is helping her old employer on occasions, a couple of hours on her day off. Of course I understand that she wants to earn some extra money and that she and her old employer are still close, but this is illegal, right? Am I liable in anyway if my DH works part time on her day off?

Yes is illegal and don't know for sure but think you are liable for her working for someone else.

What she is doing is illegal, and both you and she can be fined heavily for it. She would probably be deported and you would have great difficulty in getting permission to get another helper.
On the other hand, she is unlikely to get caught unless one of her mates reports her - which can happen.
